Beschreibung
TAKAHIRO MIYAZAKI Ken is the Japanese term for sword. Sword smiths were famous for products with outstanding characteristics. The knowledge of the sword smiths' forging art is incorporated into our Ken series.
Blade shapes proven over centuries make the knives of the Miyazaki Ken series the perfect tools in every kitchen. The visible marks of the forging hammer on the blade surface create an attractive contrast to the high-gloss polished cutting edge. The strong visual contrast - a stylistic device often used in Far Eastern art - also has a practical advantage: the depressions created by the forging hammer in the upper area reduce the surface and thus the friction, allowing the blade to glide effortlessly through the food. The steel with its carbon content is excellently suited for chef's knives, as it can be ground very finely, allowing for a very sharp edge without compromising edge retention. As little chromium was alloyed, the steel is not stainless, but rust-resistant. Cleaning after use and oiling perfectly compensates for this apparent disadvantage.
The traditional design of the wenge handle with the blackened cast iron bolster makes the knife a jewel and an eye-catcher in every kitchen. Our principle that form must be subordinate to function is particularly evident in the user-friendly handle shapes. The knives come in a wooden gift box. After use, it is advisable to clean the knives to minimize tarnishing of the steel.

Pflege
- Reinigung: Nach Gebrauch solltest du das Messer unter fließendem Wasser mit einer milden Seife reinigen. Vermeide es, das Messer in der Spülmaschine zu waschen, da dies zu Beschädigungen führen kann.
- Trocknung: Trockne das Messer unmittelbar nach dem Waschen gründlich ab, um Rostbildung zu vermeiden. Verwende dafür am besten ein weiches Tuch.
- Lagerung: Bewahre das Messer an einem trockenen Ort auf, an dem es nicht in Kontakt mit anderen Metallgegenständen kommen kann. Eine Messertasche oder ein Messerblock sind ideale Aufbewahrungsmöglichkeiten.
- Schärfen: Schärfe das Messer regelmäßig mit einem geeigneten Schleifstein oder Schärfer. Ein scharfes Messer schneidet besser und ist sicherer in der Anwendung.
- Schneideunterlage: Verwende zum Schneiden eine geeignete Schneideunterlage aus Holz oder Kunststoff. Vermeide das Schneiden auf harten Oberflächen wie Stein oder Metall, da dies die Schneide beschädigen kann.

Blue paper steel gets its name from the manufacturer's blue packaging, which indicates its high purity. The addition of tungsten makes this steel extremely hard and wear-resistant.
