Concept
TAKAHIRO MIYAZAKI Ken is the Japanese word for sword. Sword smiths were famous for products with outstanding characteristics. The knowledge of the sword smiths' forging art is incorporated into our Ken series.
Blade shapes proven over centuries make the knives of the Miyazaki Ken series the perfect tools in any kitchen. The visible traces of the forging hammer on the blade surface create an attractive contrast to the high-gloss polished cutting edge. The strong visual contrast – a stylistic device often used in Far Eastern art – also has a practical advantage: the depressions created by the forging hammer in the upper area reduce the surface and thus the friction, allowing the blade to glide effortlessly through the food. The steel with its carbon content is excellently suited for chef's knives, as it can be ground very finely, allowing for a very sharp cutting edge without compromising edge retention. Since little chromium has been added, the steel is not stainless but rather stain-resistant. Cleaning after use and oiling more than compensates for this apparent disadvantage.
The traditional design of the wenge handle with the blackened cast iron ferrule makes the knife a jewel and an eye-catcher in any kitchen. Our principle that form must be subordinate to function is particularly expressed through the user-friendly handle shapes. The knives come in a wooden gift box. After use, it is advisable to clean the knives to minimize tarnishing of the steel.

Care
- Cleaning: After use, you should clean the knife under running water with a mild soap. Avoid washing the knife in the dishwasher, as this can cause damage.
- Drying: Dry the knife thoroughly immediately after washing to prevent rust formation. It is best to use a soft cloth for this.
- Storage: Store the knife in a dry place where it cannot come into contact with other metal objects. A knife sheath or a knife block are ideal storage options.
- Sharpening: Sharpen the knife regularly with a suitable sharpening stone or sharpener. A sharp knife cuts better and is safer to use.
- Cutting surface: Use a suitable cutting surface made of wood or plastic for cutting. Avoid cutting on hard surfaces such as stone or metal, as this can damage the blade.

BLUE PAPER STEEL: ORIGIN AND USES
Blue Paper Steel gets its name from the manufacturer's blue packaging, which signifies its high purity. The addition of tungsten makes this steel extremely hard and wear-resistant. The logic behind this: the harder the steel, the finer the blade can be ground. The result is a particularly "biting" sharpness that glides effortlessly through food. You get a tool that retains its cutting performance for an above-average time and enables precision far beyond that of normal stainless steel.
