The Damascus steel created in this elaborate process, with its hard cutting core combined with flexible stainless steel layers, possesses properties that cannot be achieved by blades made of only one type of steel.

WHY DO 67 LAYERS OF VG-10 CUT SO WELL?
The reason for the special cutting performance is the three-part construction: a core of hard VG-10 steel is protected by a total of 66 outer layers. The hard core is crucial because it allows for a much sharper grind than regular stainless steel. However, to prevent the blade from being too rigid during use, the outer layers give the knife the necessary flexibility. This combination ensures that the cutting edge glides through food extremely easily while remaining robust enough for daily use. This means you will need to sharpen the knife significantly less often.
